We have been making bread weekly for the last couple of years, we cook it in the main fan oven and always use the same temperature and time to cook it, over the last 6 months the bread has sometimes been a bit light in colour and sometimes it’s been as we expect it to be, this issue seems to have been getting worse recently with some things coming out undercooked. The main oven element failed about a week ago (burnt out/open circuit), I replaced it with a PaXanpaX element (Ref: 14-EL-01/PCK238) and I was hoping that this is what was causing the above issue but it made no difference apart from the oven was heating up again. I did some testing and found the following:
- Set main oven to 220°c
- Thermostat light came on
- after about 3 minutes the thermostat clicked off and the light went off, the temperature was about 130°c
- after a minute the thermostat clicked on and the light came on
- after about 2 minutes the thermostat clicked off and the light went off, the temperature was about 180°c
- after a minute the thermostat clicked on and the light came on
- after about 1 minutes the thermostat clicked off and the light went off, the temperature was about 200°c
- after a minute the thermostat clicked on and the light came on
- after about 1 minutes the thermostat clicked off and the light went off, the temperature was about 220°c
Is this normal for the thermostat to click on and off constantly whilst heating? Is this a faulty thermostat?
I tested the top oven, the thermostat only clicked off once it had reached the correct temperature
I measured the temperature for the test above with the probe next to the thermostat sensor, I also measured the temperature at the shelf at the same time which was about just over halfway up the the oven, I found at the shelf it was about 30°c lower than the temperature at the sensor, is the normal? I thought the fan (which is working) would even out the temperature.

Moderatorchek the fan is free to turn and runs at full speed
if that fails try changing oven stat

It was the fan, it was only spinning at 170rpm, I cleaned the bearings and lubricated them now it’s spinning at 950rpm.
Now the temperature difference between the thermostat sensor and the shelf is about 8°c and the thermostat is not constantly clicking on and off.Is 950rpm the expected full speed or should it run faster as I read somewhere it should run at about 1200rpm?

Moderatorcant say fan speed as all ovens are different
you may need to chage the motor as the oil will probably fail quickly when hot
