    Hoover HFA29K fridge too cold

The fridge sensor is foamed in so would be pig of job to cut out insulation . Common for sensor to come away from back wall therefore freezing in fridge.
In my opinion better of selling new 1 rather than wasting anymore time on this 1

If you turn the control knob to zero and the fridge continues to run the pcb will be faulty.

If the fridge cuts out on zero the the sensor will be the fault.

The sensor is foamed in and is not advisable to replace it as you have to re-insulate the back of the fridge and even if you do a good job any air leak will lead to ice building up on the outside of the fridge.
