Diplomat ADP5340 cooling fan constantly running

Customer bought used and had a variety of problems including the cooling fan running constantly from cold.

I found a cooling fan safety device (like a TOC) which was falling apart. I disconnected it and the fan stopped, so I assumed that its terminals had fused into the closed position and that it should be open circuit when cold.

I have read a similar post on here from a few years ago which suggested Masterpart number 2.12SPA011130. This comes up as an 81 deg safety thermostat but it is out of stock. Put the same number in Connect Dist search to reveal a ‘TOC cooling fan thermal limiter’. I’d already ordered this part from Connect and found that it was closed circuit when cold.

I’m really quite confused.

Connect 5031681420417 is a “fan initiation stat” for Lux ovens. It is N/O at room temperature and makes at around 50 degrees. I always keep one on the van; seems to work perfectly on just about any make.
