My Servis fridge freezer model C60185NFPT has the freezer section frosting up, which doesn’t normally happen, and the fridge section is hardly getting cold even on maximum setting. The unit is three years old. Is it simply a case of fitting a replacement thermostat or something more complicated? Advice would be much appreciated.

It’s frost free and looks like it draws air from the freezer to the fridge so it’s very possibly blocked with ice.
First thing to do would be to defrost if fully, at least 24 hours off with the doors open, then try it again.
If it still doesn’t work then it’s time to dig deeper.
