Help please! Pan sensor hotplate.

Got a rangemaster 110 which needs the pan sensor hot plate changing. (Apparenlty obsolete now) so I have a regular hot plate and new simmer stat but just gone brain dead re the wiring. Old plate had 3 wires, new one has 4. The stat is different too – obviously. Now I have changed the s stats on the other plates over the years to the new style no problem, but just can’t fathom the wiring on this one.
Anyone help?
I have posted a pic of the old stat and the new one. Can get a pic of a new stat wired in if needed.
