    How can you stop electric hobs from burning work surfaces when the customer cooks at very hot temps for a long time?

    fit them into granite worktops! most people with solid hotplate hobs are on a budget, and therefore most worktops are cheap and cant withstand high temps.

    I would ask about the quality of the pans being used.
    If they use cheap pans that have gone convex on the base there is little contact between the pan and hob and heat will conduct sideways into the work surface instead of upwards into the pan.
    Good pans cost the earth so we’re back to the budget thing again.
