most ovens have a cooling fan. not the fan inside the oven it blows cold air around the inside and out over the door to keep things cool. if the fan fails then oven will do exactly what your is
if you remember when the oven is working correctly the cooling fan carries on running for 10 mins or so after the oven is switched off

on some cookers yes but others no so worth checking

pull one wire off and switch on to see if clock goes off. if yes it cant be the stat

What about the door switch? Some ovens stop the fan and element when it thinks the door is open to save energy – I don’t know if the switch is on the mains voltage side or the low voltage side but if it is on the low voltage side then it may not take much resistance for it to think that the door is open.

    well agree there
got an oven over 50 years old , simple thermostat still works ok

dont use it much and do intend to swop it when i do the kitchen

its that old that the knob operates a bevel gear to turn the horizontal rotation to vertical rotation and a rod goes down to a rod stat. Was reconditioned when my dad bought it in 1970

thats when Belling cookers lasted lol

back out to the oven, once it gets hot there is an earth leakage at the fan oven element, going to change it and keep fingers crossed.
tried disconnecting safety thermostat and the oven still worked no heat, bypassed door lock it still cuts out,
    nightmare job.
