We’re moving into a house with a built in Neff fan oven with no
instructions. It’s got 2 popout knobs, one clearly the fan oven. The other
I am told is just grill, but it also has symbol with 2 parallel lines. The
temp on the ‘grill’ control goes up to 250, on the fan control 190. It
looks to me as though maybe the ‘grill control’ also lets me use it as a
conventional oven, anyone have any idea about this?

Your supposition is probably correct. Check around the framing of the oven for the eNr number, then use this link:
