samsung Oven cooling fan will not turn off

Hi I have a Samsung Single oven and the cooling fan just runs all the time.
I have located the fan which is connected to a small circular thermostat that just gets its temeperature from the oven casing.
If I disconnect the wire from the cooling fan thermostat the fan stops.
I have checked continuity from this little thermostat and it has continuity when cold. If I warm the thermostat up the continuity breaks.
My question is that shouldn’ t this thermostat work the other way around meaning no continuity when cold and gets continuity when hot to turn the fan on.
Any help much appreciated.

I would say this is not the stat that is controlling this fan.

if you disconnect the correct stat then only the fan will go off if anything else goes off its cant be correct
