To get a accurate temperature I have a stainless steel lead with probe that fits into my meter I must do at least 1 temperature test every 2 weeks normally on beko gas cookers which I have to before changing the thermostat
Realised today my multimeter actually came with a temperature probe, was miles off when I tried it, but after wrapping the end of the sensor in foil in read temps perfectly.
So that probe failed, then the replacement failed too. Ended up getting a ThermoPro TP16B which works really well with a digital readout, and it cools down much faster than those analogue thermometers so its safer putting back into my toolbag.
