ah, i have a little more info. sometimes i can hear pump, sometimes i can not hear the pump. would this indicate an issue with the thermostat.
However i have unscrewed the dial from the side, which appears to incorporate the thermostat, and shorted it out. now assuming i shorted the right connectors (there is 4 connectors. using my multi-meter i made assumption that 2 of these are the switch on-off, so i assume the other 2 are the thermostat which i have now shorted out.). but this has made no difference. the pump still switches on and off at times. so is there something else controlling the pump, like maybe an overheat switch, or have i failed to short the thermostat correctly?

sorry, i thought this would be a common fault and solution.
The issue is the freezer is built-in and it will be hard work to pull it out to find this information. i will of course do this eventually. What i can tell you is it is old built-in under counter freezer by NEFF. it has no digital stuff, just a simple dial i can turn from 0 (off) to 5. It is located in the kitchen.
