After the deluge of replies 😉 , here is what I have done.
In the fridge compartment I replaced the defrost sensor (black version – the white ones are prone to failure) and put a new heater into the evaporator assembly. If you twist the fins you can work your way along the old heater tubing and remove it. The new heater is secured if you bend the fins back again.
The freezer temperature still varies by about 5C° but at least it stays in negative double figures. The condensation in the fridge is much better as there is only occasional light moisture, as it has always done from new.
