    could it be that the compressor is loosing refrigerant and unable to lower temperature enough to switch off the thermostat, but still enough to ice up and freeze some food?

    and, when turning the knob to 0 position, the compressor and lamp go off as expected

    Yes, I did some effort to correctly wire it (actually got it wrong first time).
    Connector
    6 – input power
    3 – wire to the lamp
    4 – wire to the compressor
    Checked the wires by the C L H letters in the old therm

    The fridge is around 5 years old.
