Im not familiar with these so bear with me.
Is the defrost timer the usual type, if so when it “sticks” is there still a feed to its motor?
The usual defrost timer motors used to go weak after some usage, and they lost the strength to turn off the defrost cycle.
Worth a check anyway 😀

Ive had a cannon cooker jumping spark at the ignition unit box.
Insulation on electrode plug/s was poor. Put some extra insulating tape at the base around them and fault cured.
