Did you check the feed to the components that you have replaced? (IE Are you certain that all the components that you gave replaced are o/c?

I have one of these ovens and by the sound of it I wouldnt say that the elements are thyristor controlled. You can here a relay clicking in and out to switch the elements.
Cpmsidering the BANG Surprised that you cant see any pcb damage. Have you checked the tracks underneath?
