If you kinked the capillary on the new t/stat it won’t work at all 😉
The capillaries are very fragile and must be bent with care. It’s a small bore copper tube with refrigerant inside (liquid and vapour) that responds to temperature change (it has as specific pressure/temperature relationship) and activates the power element, (a bellows arrangement) opening and closing the switch points.
The other thing it could be is short of refrigerant.
If the evap plate is only partly frosted, eg 1/3-1/2 or so across the plate the fridge will run all the time and freeze the contents as the end of the plate where the t/stat capillary is situated won’t be cold enough to cut out.

The compressor is stalling on startup.
Unfortunately Mistral are very cheap, in all senses. 😉
To test and diagnose you really need to be qualified to work on electrical equipment as some testing is done live.
It may be a faulty run capacitor (common), a bad/burnt connection on one of the compressor terminals, a faulty start winding on the compressor or the compressor is seized.
A run cap is an easy fix, any of the other faults I’d suggest a new air conditioner and preferably not a Mistral 😉
