It depends how cold you want your food kept really, personal choice hence the adjustment on the thermostat knob 😉
2C – 5C is the norm, electronically controlled models will generally (manufacturer dependent) have less of a fluctuation on temperature control due to the better accuracy of non mechanical controls 🙂

Both knobs are the same part number on BSH – 155314 😉
If the part behind the knob has broken though (likely) the whole control panel is required – 350364 😥

I would call an engineer to this to be honest, the problem could be the PCB or it could be system related.

It’s the correct PCB part number so that’s a good start 🙂
These will not kick in for several minutes after fitting to protect the compressor (it thinks it’s a new appliance). Leave the power on for an hour and see what happens 😉
If that doesn’t work, the PCB is duff I would say.
