Hi
Both the oven and grill works off the same ignitor so both will spark at the same time. This will normally be caused by dirty jets in the oven ,grease build up or the flame not going into the ignition candle. They work on rectification. So will need an engineer who is qualified.

As you are running a repair business then isn’t it normal that he would continue with yourself so that he learns the way that you want things done ?
The issue I would see is that he would not be able to be just sent to calls and repairs straight off and would need to be trained to what degree ? is the college requiring certain things ?
Does he expect to be paid ?

The engineer has the responsibility of diagnosing the fault correctly. I would very much doubt that the PCB has failed and would need to be confirmed correctly.The engineer should come back out and check that the parts where fitted correctly and have not gone faulty again. By switching off and back on only terminates the defrost and resets that side of it. I personally would still be looking at the defrost components within the fridge section and ALL of those functions can be tested without turning the appliance off. Make sure that the appliance has not been turned off for 24hrs before the engineer attends as the main pcb holds the defect code and the area that the appliance has failed.

The cut out is there to stop the oven cavity from overheating, these range from 75oc nc to 160oc nc.
Using one that is set at a lower temp will use the appliance to cut out early and shut the appliance down.
Is there any numbers or labels anywhere on the oven outer case or below the oven door seal ?

IF it is a pre programmed board then it is plug and play BUT if it is an un programmed board then it will need to be programmed.
