if the clock controls the oven my first check would be to check the clock electrically. if it does control it there will be a relay that switches the oven on and off. you need to check its closing. if you post a picture of the rear of the clock will help

very likely pcb
have you checked pcb for blown tracks or door lock triac damage?
not an unusual fault. sometimes if you hold the start button it will latch till you let go

before you jump in and guess
join the 2 wires of the stat together. if oven then works your on the right track
the stat could be the cut in stat for the cooling fan

“no” in a word
use a crimp connector but since the wire broke by the cable tie you need to joint the wire on the sensor side of the cable tie. you need to find a bit of slack cable and pull it through.
if you dont it will break again on the crimp very quicklyDave

I don’t know of any clock that defaults to manual so that strange unless the clock does not control oven

short answer no
are you sure the clock is in manual mode?
when you first turn oven on you have to set the clock and select manual mode before the oven will work
