If you are paying a reasonable amount of tax it is cheaper to buy if you can buy one outright without a loan.
Over three years you can recover the full cost against your tax.
If you need to take a loan to buy a van then I would lease.

You have airflow inside the freezer blown around by a fan.
The air over the evaporator is most likely restricted by ice giving incorrect readings for the sensors.
When you reset the PCB by turning it off it will also go into an auto defrost.
If too much ice is present then it will not fully defrost, then ice builds up slowly and sets of a warning on the display to say it is not cold enough.
When it has been fully defrosted then the defrost system should return to normal.

The sensors are not visible without dismantling the appliance as they are attached to the evaporator.
It if most likely a build up of ice so it restricts the airflow so the only option is to defrost or dismantle and defrost.
As the most likely problem is an air flow problem you would get an intermitant reading on the sensors.

As Martin said it is best to fully defrost it as it may be ice on one of the sensors the defrost system cannot clear.
By turning it off you just reset the PCB and if it is ice on the evaporator or sensor it will not be working correctly and show as an intermittent fault.

The clicking noise will be the thermal cut out on the compressor.
The compressor will be seized it can be replaced but would be beyond economical repair for your model.

Normally a strait swop you have to take out the water solinoid valve to fit.
Not much room to fit but I have never found a problem with the size of the pipes.
If connect supplied the part they should be able to let you no if there is any mod kits.

The water must be turned off at the supply so you are not getting any water to the appliance.
The tank referred to would be the tank in the fridge compartment behind the saled box’s.
If the water was on when you draw water from the door the tank would leak.
You will have to replace the tank and turn on the water supply.
The single pipe feeds the water to a duel solenoid valve so you would have to replace the tank before turning the water back on.

If you are a paid up member of the WTA just tell them you are a WTA member and agree to the WTA terms so you do not need to join them.
Tell them most contractor schemes are about the money for registration and not checking if the contractor is safe to use.
