most Synchronous motors will run both way but to stop this happening there is normally a little plasic pawl that jams the rotor if it tries to go in the wrong direction. chances are this plastic part is either jammed or broken. if its jammed will prob be grease going hard with age and wd40 in the motor might cure it

provided it has been plumbed in correctly there will be taps on the hot and cold pipes
turn off taps but be careful they can sieze up over time and the plastic tops break. if the top has broken take off the top and use a spanner to turn off. you need to move the tap by 90 degrees

when off lossen pipes slowly making sure the water has stopped or is very slow before removing

you can buy a blank to seal off the end from B&Q , wickes or plumbers merchants

as mentioned above pipe is a steam vent. on later machines the steam came out of the soap draw. this was because more people had fitted kitchens and to vent steam at the back ruined the units
dont know what you plastic bit is but if had a picture i am sure we may be able to tell what it is

got wiring diags and a howto take it apart section if it helps

white wires are the thermal part you can meter it bto be certain you will get the heater resistance

one wire terminal 11 ( to get neut when switched on) other wire terminal 7 to get live

blue wires

one goes term 11a or perm neut other goes to fan motor

live is P1 old unit prob line
neutral is 4 old one prob neut

s1 and s2 are the pilot light only if you cooker has on to say when ring switched on. on old uniot will be labled pilot. to get it working you will have to add a link wire from live to s1 or s2 from P1 then you pilot goes to the other

2 is load A on old unit when one single element comes on
P2 is load b the second element
